Lasagna Soup
Hearty Italian Lasagna Soup
Ingredients:
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons tomato paste
- 4 cups chicken broth
- 1 (28-ounce) can crushed tomatoes
- 2 bay leaves
- 8 ounces lasagna noodles, broken into pieces
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Directions:
- Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the pot.
- Add the diced onion and cook until softened, about 4-5 minutes. Add the garlic and cook for another minute until fragrant.
- Stir in the red and yellow bell peppers, oregano, basil, and crushed red pepper flakes. Cook for about 3 minutes until the peppers begin to soften.
- Add the tomato paste and cook for another 2 minutes, stirring constantly.
- Pour in the chicken broth and crushed tomatoes. Add the bay leaves and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes.
- Add the broken lasagna noodles and cooked sausage to the pot. Continue to simmer for 10-12 minutes until the noodles are tender.
- Remove the bay leaves and stir in the grated Parmesan cheese and chopped basil. Season with salt and pepper to taste.
- Ladle the soup into bowls and top with shredded mozzarella cheese. Serve hot.
