Lasagna Soup

Hearty Italian Lasagna Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28-ounce) can crushed tomatoes
  • 2 bay leaves
  • 8 ounces lasagna noodles, broken into pieces
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the pot.
  2. Add the diced onion and cook until softened, about 4-5 minutes. Add the garlic and cook for another minute until fragrant.
  3. Stir in the red and yellow bell peppers, oregano, basil, and crushed red pepper flakes. Cook for about 3 minutes until the peppers begin to soften.
  4. Add the tomato paste and cook for another 2 minutes, stirring constantly.
  5. Pour in the chicken broth and crushed tomatoes. Add the bay leaves and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes.
  6. Add the broken lasagna noodles and cooked sausage to the pot. Continue to simmer for 10-12 minutes until the noodles are tender.
  7. Remove the bay leaves and stir in the grated Parmesan cheese and chopped basil. Season with salt and pepper to taste.
  8. Ladle the soup into bowls and top with shredded mozzarella cheese. Serve hot.
