Mediterranean Tuna Salad

Vibrant Mediterranean Tuna Salad

Ingredients:

  • 2 cans of tuna in olive oil, drained
  • 1/2 red onion, thinly sliced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons capers
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • Juice of 1 lemon
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine the drained tuna, red onion, cucumber, red bell pepper, Kalamata olives, feta cheese, capers, and chopped parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Serve immediately, or chill in the refrigerator for 30 minutes to allow the flavors to meld.
