Mediterranean Tuna Salad
Vibrant Mediterranean Tuna Salad
Ingredients:
- 2 cans of tuna in olive oil, drained
- 1/2 red onion, thinly sliced
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons capers
- 1/4 cup chopped fresh parsley
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- Juice of 1 lemon
- Salt and pepper to taste
Directions:
- In a large bowl, combine the drained tuna, red onion, cucumber, red bell pepper, Kalamata olives, feta cheese, capers, and chopped parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Serve immediately, or chill in the refrigerator for 30 minutes to allow the flavors to meld.
